Steak and Cheese Quesadilla with Fire Roasted Tomato, Black Bean, Corn Salsa!
Quesadillas! THE MOST amazing way to turn leftovers into a Prom Queen Dinner of fabulousness! Seriously! Here's what leftovers looked like tonight. Simple quesadillas, quick "pantry-freezer" salsa, and a fiesta of flavor!!
Here's what I had... a bag-o-frozen corn, can of black beans, can of fire roasted diced tomatoes, the juice and zest of 1 lime, one chopped red onion, and some fresh cilantro I rescued from the bottom of the veggie drawer!
Let the corn thaw in cold water for about 10 minutes or so. Chop onion, drain black beans, rip cilantro into pieces, and add corn to a big mixing bowl with the juice and zest of one lime with some salt and pepper to taste!
Gently toss together to combine. Talk about fresh salsa "on the fly"!! So good, this ALONE could be one fabulous bowl of dinner... but we're not done... cue our little leftover prom queen!
Now, we happened to have some spectacular leftover rib-eye steak. A very unusual "score" on leftover night. You may have some chicken, pork, even veggies... what ever you have, it will be delicious in a quesadilla with cheese... trust me. Quesadillas are magical this way! Here's the Gremlin way (easy and fast)
Lay one tortilla on a paper plate and add about 1/4 cup of cheese, or as much as you like. Cheese is like the glue, so I add some to the top, and the bottom.
Next, add a little of that grilled steak (or whatever you have leftover...).
Now, add some of that fabulous corn salsa!!! BOOM!
Last, add a little more cheese to glue this prom queen of flavor together! I put the whole thing in the microwave for about 1 minute to get it heated through the center.
After zapping it for about a minute, I wanted to crisp it up, so I added it to a hot pan for about a minute (or until golden brown) on each side. Use cooking spray to prevent sticking. You could also grill it and it would be even more fabulous!! You choose!
Hungry yet?? Cut your quesadilla and get ready to chow down! Not your ordinary "leftover dinner"... that's for sure!
Add your favorite salsa, some sour cream, and more of our fresh black bean and corn salsa and you have one super tasty, healthy, weeknight dinner! Quesadillas! BOOM!

ReplyDeleteSeriously Cuch!!! The salsa was so "on the fly" and freakin' tasty! I think the lime zest kicked it's ass into flavortown! So good!
