BLTs with Sweet Potato Wedges and Chipotle Slaw!!
BLTs! This simple sandwich supper never tasted so good! Add some sweet and spicy wedges and slaw, and you've got dinner covered! First, the wedges...
These 3 ginormous potatoes will be plenty for 4 of us tonight! Usually for wedges, I plan on one per person, but these are huge!
Peel the potatoes and drizzle with olive oil. Shake on some salt, pepper, garlic powder and a little cayenne to taste. Pop those wedges up like little sail boats (weird, but better... they won't stick and get crispier on the sides) and cook in 425 degree oven for at least 30 minutes, or until tender inside.
After 30 minutes, these are my sweet spicy wedges. Now, get ready for the B in BLT.
Now this is how I cook my bacon... yup, in the oven! In a 400 degree oven lay your bacon on a foil lined pan (if you have a rack, that's good too) and pop in the oven for at least 30 minutes, or until crisp. Remove bacon and drain on paper towels and let all that bacon fat cool. For easy clean up, fold up the edges of the foil and toss... easy peezy! Next, the L and T...
Here are tonight's lettuce and tomatoes... with Queen Hellman... super secret flavor weapon for only the BEST BLT!
Lightly toast your favorite bread and liberally add the bacon lettuce and tomato! OH YEAH... we had slaw too!
This whole dinner actually started with some super quick slaw! Slice half a red cabbage, add shredded carrots, 4 scallions and about 1/3 cup of cilantro. Add to big bowl and toss with your favorite dressing.
Tonight we tossed our slaw with some chipotle dressing.... and PRESTO... yummy healthy slaw... so good!
