Sriracha Lime Chicken Wings with Crispy Slaw and Chedder-Buttermilk Cornbread!

Hot, savory, sriracha-lime wings with cool crispy coleslaw and rich creamy cheddar buttermilk corn bread... WOW! This is one seriously gangsta' meal with big flavor! Lets start with the slaw... so easy!!! We LOVE slaw! Crispy cabbage and a variety of add-ons! Here's how tonight's slaw started! Slice one half of one red cabbage, 1 cup of shredded carrots, 4 sliced scallions and half cup (or more) of fresh cilantro. That's all... super easy! Add all the slaw ingredients to a big mixing bowl and get ready to make the dressing... so easy, you could literally make this in your sleep, zzzzzzzz.... Add half cup of mayo, 2 tablespoons of honey, and the juice and zest of one lime to a mixing bowl. Season with salt and fresh ground pepper. Mix up your super creamy, super easy dressing and add to the slaw! Toss to combine and park in the fridge or on the counter until it's time for dinner! Time for some kick-ass cornbread!! Tonight's cornbread has corn meal, flour, sugar, baking powder, baking soda, salt and cayenne powder... along with 2 eggs, buttermilk, butter, and grated cheddar cheese. Sooooo freakin' good... start with the dry ingredients. Add 1 and 1/2 cup corn meal to 1 cup flour, 3 tablespoons sugar, 2 teaspoons baking powder, 1 teaspoon baking soda, 1 and 1/2 teaspoon salt, and 1/2 teaspoon cayenne powder, and mix with whisk. Add wet ingredients: 1 and 1/2 cups buttermilk, 2 eggs, 3 tablespoons melted butter, and whisk together as well. Now add wet to dry ingredients and gently add 1 cup grated cheddar cheese. Bake in a 425 degree oven for 30 minutes, or until toothpick comes out clean (from center of cornbread). Your house smells like heaven right now, and you haven't even cooked the wings! Keep your oven on 425 and get ready to pop in the wings! Take 4 lbs (or so) of wings and add some olive oil, salt and pepper, and cook for 30-45 minutes in your 425 degree oven. I wanted crisp wings, so I cooked mine at least 45 minutes. While wings are cooking, make the sriracha lime butter sauce! Soften 1 stick of unsalted butter and add 1/4 cup of soy sauce and 1/4 cup of honey. Mix to combine in a big ol' bowl so when the wings are done, you can toss them in. When wings are done, add to the sauce and toss. Now, you can gobble these wing right up now, but I gave them some more time in the heat... Here's where I turned off the oven and put the "sauced up wings" back in to the oven to get get sticky and yummy in some gentle heat for another 15 minutes! Get ready to finish your dinner with some fresh lime juice and cilantro! Plate up those sriracha-lime wings and give them a shpritz of fresh lime juice and some cilantro! BOOM! If that wasn't delicious enough, get some slaw and warm cheddar cornbread on that plate and eat your way into something special! Wings done RIGHT!
