What?? No Kids? Flying Solo with Asparagus Pasta!

So, an unusual night! No kids (college break over, sleepovers... quiet house)! Looks like Mommy's cooking for one, with all her favorites... pasta and veggies!!!! So after getting over the disappointment of having no boys to feed, I quickly remembered the beautiful fresh asparagus I bought today! After washing and drying those thin little stalks, I roasted them (as I often do), in a 400 degree oven with a little olive oil, salt and pepper, for 5 minutes to start! After roasting for 5 minutes, I added a cup of cherry tomatoes (jiggled the pan), popped back into the oven and roasted for another 5 minutes. After 5 more minutes of roasting, I placed the tomatoes and asparagus in a bowl, to get ready for the pasta party about to show up! I sliced the asparagus in half, but that's optional. While the asparagus was cooking/resting, I cooked some pasta, according to the directions on the box. About half a box (or half pound). I like thin spaghetti, cooked al dente. While pasta is draining, drop a tablespoon of olive oil back into the hot pasta pot, and put it back on the stove that you just turned off. Don't add heat. Now add 2 or 3 cloves of garlic (smashed through a garlic press) to the pasta pot with the oil and mix. The heat from when you cooked the pasta will warm the oil and garlic, without burning. Now, return the drained pasta back into the pasta pot and toss to coat with the garlicky oil. While a garlic press is the least glamorous tool in the kitchen, shunned by many, it totally does the trick here. We want quick, fresh garlicky goodness tossed with that pasta. You will not regret it! Now, toss the pasta in the bowl with the asparagus and tomatoes... and crumble half a wheel of the Boursin cheese over the top. Add a hand full of pistachio nuts and toss to combine! After tossing all together, add some fresh ground black pepper! The cheese will melt a bit and the flavor from the garlic will spread throughout the dish. And there you have some Saturday night flying solo-Gremlin-Momma pasta, though these proportions would easily serve 4 as a side, or 2-3 for a meal. After you try this, you will make it again and again! One of Joe's top 10 pasta favorites! Perfect springtime dinner or late night snack.
