Tuesday Tacos with Chipotle Spiced Pork Tenderloin!

Tuesday! And that means band practice (ahhh... jammin' with some rockin' peeps!). So, I spent more time with... her, than I spent in the kitchen. Needless to say, this didn't keep me from some quick and tasty chipotle pork tenderloin soft tacos! Here's how it went! First, I seasoned up those pork tenderloins with some south west chipotle seasoning! You can find many "south-west" seasoning mixes in a lot of places, but, if you can't, try a combination of smoked paprika, crushed red pepper, garlic powder, salt and pepper, and some cayenne. You want a little heat and a little south west on these babies. After I seasoned the tenderloins (and I season pretty "aggressively"... I want some flavor on that meat... at least 2 Tablespoons, rubbed into each tenderloin), time to sear. In a medium hot pan coated with olive oil (a tablespoon) drop the tenderloins in and sear on all sides, turning with tongs. after searing the meat, place in a 400 degree oven for 15 minutes, or until it reaches 137 - 140 degrees. After 15 minutes, I was at 130, so I let it go for 5 more minutes until I got 140 degrees! Perfect! When pork is cooked, let it REST! Meat mantra 101... some molecular magic happens when the meat rests. It stays moist and tender... not dry! I like moist and tender, every time! So, now meat has rested, and it's ready to get tucked into a taco! Slice the meat about a half inch (or smaller bite size pieces) for tacos. If not eating in tacos, I like it thicker, an inch at least. Tonight, it's soft tacos! So, tonight, let's finish these soft tacos with some fresh spring greens, sliced avocado, and cilantro... and how about some sriracha-lime sauce... OH, YES PLEASE! Sriracha-lime sauce is exactly what it sound like... Start with 3/4 cups of mayonnaise, 2 tablespoons of sriracha, and the zest and juice of one lime. Add to a mixing bowl and whisk together. Now, get ready for some tasty tacos! Assembly, here we go! Warm soft taco shells in oven (wrapped in foil), or zap in microwave for 10-20 seconds. Add some sliced pork tenderloin to your taco shell and top with a big handful of greens, fresh cilantro, sliced avocado, and a little of the sriracha-lime sauce! The warm spicy pork with the fresh, cool avocado and sweet greens with that tangy sauce... you can't beat this! Super healthy and delicious! Completely satisfying my soft taco cravings on a Tuesday... or any day!!

  1. Its a hit!!! The Deane Family just devoured Gremlin's "Friday" night pork tacos. The Siracha-Lime sauce was perfect and the cool avocado and the greens and the hot spicy pork cooked "just so" after resting. These will go into the rotation as a new favorite. Thank you!   2. YES! I loved it too! You could top it with almost anything, but I loved the greens and avocado too! So easy too! If you don't have a pan that goes both ways (stove top-oven), you could sear it off and then pop it on a baking sheet! Yay!
