Pizzas!! Your Way!

Home made pizza couldn't be any better to share the food-love, and... one glamorous way to toss left-overs into a delicious (post yoga class, Monday night) dinner! BOOM! Tonight I made some quick and easy pizza dough in the food processor with 3 cups flour, 2 teaspoons kosher salt, 3 teaspoons Italian seasoning (OK to omit, of you don't have it)... just pop into food processor with dough blade. Into 1 cup of warm water add 2 teaspoons of yeast and a pinch of sugar and let it sit for 10 minutes (wake up the yeast)!! Next add 2 tablespoons olive oil to warm water and yeast, and add to the flour with the processor running! When combined (and it happens quick!), let the processor run for another minute to "knead" that dough! Dump the dough on to your floured surface and knead a minute until smooth. Place dough in an oiled bowl to rest for an hour to an hour and a half. I pop mine in my warm cozy microwave and make SURE no one pushes any buttons!!! Perfect "rising" spot! If you don't make your dough, NO BIG DEAL, get store bought dough and it will be awesome! NOW... onto making Stevie's pizza! Take about a fourth of the dough (for one pizza) and make a flat round disc using your hands or a rolling pin. I use my hands and take that ball of dough and treat it like a steering wheel, flattening and pinching as I "turn the wheel" around and around! Time for pizza Stevie's way... plain dough, red sauce, and mozzarella cheese. 'Nuff said... this went in... And this came out! Can you say "THIN CRUST"? 450 degrees for 10 minutes! Put your pizza on the bottom... it's the "hot spot"... perfect for crispy crust and cooked toppings! Stevie likes his pizza plain...But the rest of us like some fresh tomato, left over grilled veggies, pesto, and fresh "pearl" mozzarella cheese and pine nuts! Here's pizza Joe's way... So here we go! Pesto (about 2-3 tablespoons) spread on the dough, top with a cup of mozzarella cheese and grated parmesean and add grilled veggies, sliced tomato and pine nuts (a handful, sprinkled). Cook in a 450 degree oven for 10 minutes and this is what you get! YUM! Make some home baked pizza with your posse! They will LOVE IT! And, love YOU for it too!
