Cinco De Mayo!! Pico de Gallo!!
Cinco de Mayo means liberation and freedom for our neighbor, south of the border! Booyah! Let's take a moment to celebrate Mexico and all the deliciousness this country has offered us! Couldn't live without it! So, this American, Mexican loving familla will be having Mexican dip (burrito filling), Mexican rice, and Pico de Gallo (best condiment ever)! Fresh, yummy, warm and tasty! Let's see how many ways we can enjoy these strong, smoky flavors...starting with pico de gallo!
Tonight... Pico de gallo... a must have for any self respecting Cinco de Maya celebrating American!! Here we go! You'll need 6 plum tomatoes (chopped), 1 jalapeno pepper (seeded and chopped), 1 small red onion (chopped), and one bunch cilantro (one cup chopped), and one clove garlic (chopped) and the juice of half of one lime... along with salt (at least a pinch)!
Add all the Pico Players to a big bowl and mix together! While they have their pregame party.. get ready for the Mexican rice... fiesta style!
Tonight's Mexican rice begins with 1 small onion chopped (1 cup), 1 pepper,chopped (1 cup), 3 cloves garlic (chopped), 1 and 1/2 cup rice, 2 cups chicken stock, 1 small can fire roasted diced tomatoes, 1 teaspoon salt, and 2 teaspoons chipotle seasoning!
Add onion, pepper and rice to saute pan with 2 Tablespoons olive oil. Mix and heat for about 5-10 minutes until rice is slightly toasted (golden) and veggies are soft! Add 2 cups chicken stock (or water, though stock is better), salt, tomatoes, and chipotle seasoning. Mix together and let simmer on low for 15-20 minutes, covered.
Now, your Mexican rice is super delish... but to put it over the top, I add some beans (rice and beans together are a complete protein)!! Rinse the beans and add at the end to warm through! Crazy good! And, last but not least, the MEAT!
Tonight the meat is super lean ground sirloin! Put together with refried beans (one can, fat free), jalapeno peppers, taco seasoning (one packet), one cup prepared salsa, one cup chedder cheese, and one cup Jack cheese!
Lets start with the beans!
Add your can of refried (fat free) beans to a small baking pan with some jalapeno peppers on top!
Meanwhile, cook the ground sirloin over medium heat for 5-8 minutes until cooked. Add packet of seasoning and cook another minute. Layer on top of the beans and jalapenos!
Add one cup of your favorite salsa onto the ground sirloin, and then top with...
1 cup chedder, and 1 cup of jack cheese (melty!)! Place in a 350 degree oven for 30-35 minutes until it looks like this!
