Blue Cheese Garlic Bread with Zucchini and Shallot!

Blue cheese... love it! Partnered with shallot, olives, garlic and fresh zucchini, and you have some seriously sinful, decadent bread to go with your next meal (though, if I were you, I'd make THIS my meal)! Anything that goes with blue cheese will go with this bread... to start we'll need... One medium size zucchini, sliced thin, 3-5 cloves garlic (I say 3 to 5 because you know I used 6, and don't want to freak y'all out... 3 would do the trick), 1 shallot sliced thin, some olive oil, and a block of blue cheese (as much or as little as you like, I used about 7-8 ounces, or about 1 and 1/2 cups crumbled). Olives put this over the top, and why WOULDN'T you put this over the top? For the bread, use any kind of bread you like! We have this cool "Mom and Pop" local grocery place that makes their own ginormous pita breads, which is what I used. You could use your favorite french loaf or italian bread, ciabatta bread, or focacchia... anything... it will work! I rough chopped the olives (8 big ones, to be exact) and the garlic, and it was time to assemble!! Time to begin!! Drizzle a little olive oil on the bread (what ever kind you choose) and sprinkle the garlic on top. Next, fan out the thinly sliced zucchini and shallots over the bread. Crumble the blue cheese over the top and finish with chopped olives. Pop into a 375 degree oven for 12-15 minutes. The bread is already cooked (hence the low temp) but we want to melt the cheese and get that zucchini tender and yummy! And THIS is what I pulled out after 13 minutes! Creamy, aromatic, blue cheese and shallots... fresh roasted zucchini, and tangy salty olives with crispy crunchy bread, ! This is one bread full of "power flavors", for anyone ready to handle the blue cheesy love! Tonight... tasty green salad with sinful blue cheese bread! And, maybe even dinner tomorrow! YES, please! Bread sings the blues!
