Grilled Caprese Chicken with Pesto Pasta!!
Addicted to garlic? Me too. Craving something with fresh tomato and basil from the garden? Me too. Want some lean protein so you can kick tomorrow's work out into high gear? Yes... me too! So, tonight, we chose grilled chicken but amped it up Caprese style... and here's how it started!
I butterflyed (split down the center) 2 boneless chicken breasts and seasoned with salt, pepper and garlic powder. Don't worry... more fresh caprese flavor is coming up later!!
Grill chicken for no more than 3 minutes per side (depending on how big they are). They should feel slightly firm to the touch, but not hard.... don't over cook. It will go quick!
Now we all know the grilled meat mantra... all together... "let the meat rest"!!! But tonight, it will rest with a handful of grated mozzarella cheese on top (cover with foil for 10 minutes)... and before you know it, it will look like this...
Now that looks good, but it's about to get better!!
To put the caprese into this chicken, I washed and halved 2 pints of cherry tomatoes. Next, I added 2 cloves of garlic that I peeled and passed through a garlic press.
Then, I took about 20-30 basil leaves (or as much as you like) and piled them on top of one another, rolled up like a cigar, and gently sliced. Add that to the tomatoes and garlic with a few pinches of salt and fresh ground black pepper and a little drizzle of olive oil and this is what you get!
Your house officially smells like tomato basil heaven! I dare you to try and keep your nose out of that bowl of caprese goodness... I couldn't do it... intoxicating!! To complete this tasty trip to Caprese, cook your favorite pasta according to package directions (al dente) and top with pesto! You can make your own, or use your favorite brand... but pesto is super easy and best fresh (more on that later)!!
Top your pasta and grilled chicken with all that tomatoey-caprese yumminess and get ready to make this one of your favorite summer chicken dinners!!
